This rice is also called Usali in the cuisine of Maharashtra and  Karnataka and is prepared on festivals such as Ekadasi, where people have to fast. With the dry roasted rice or sojji once established, various dishes can be prepared by varying the seasoning.<\/p>\n\n\n<p> A basic seasoning is described below, which can be varied as per taste and local ingredients.<\/p>\n\n\n<!--WPRM Recipe 2648-->\n<div class=\"wprm-fallback-recipe\">\n\t<h2 class=\"wprm-fallback-recipe-name\">Masala Sojji<\/h2>\n\t<img class=\"wprm-fallback-recipe-image\" src=\"https:\/\/dev-global-press.pantheonsite.io\/wp-content\/uploads\/2020\/04\/masala-150x150.jpg\" \/>\t<p class=\"wprm-fallback-recipe-summary\">\n\t\t\t<\/p>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t\t<\/div>\n\t<div class=\"wprm-fallback-recipe-notes\">\n\t\t<p><strong>For The Masala<\/strong>:<\/p>\n<p>Coriander Seeds &#8211; 1\u00bc palam<\/p>\n<p>Grated Copra \u2013 2\u00bd palam<\/p>\n<p>Cloves &#8211; 1\/8 palam<\/p>\n<p>Cumin Seed &#8211; 1\/8 palam<\/p>\n<p>Shajeera\/Caraway Seeds &#8211; 1\/8 palam<\/p>\n<p>Pepper &#8211; 1\/8 palam<\/p>\n<p>Cinnamon &#8211; 1\/8 palam<\/p>\n<p>Nagakesar\/Cobra Saffron \u2013 1\/8 palam<\/p>\n<p>Cardamom \u2013 1\/8 palam<\/p>\n<p>Asafoetida &#8211; 1\/18 palam<\/p>\n<p>Red Chillies \u2013 5\/8 palam<\/p>\n<p>Turmeric &#8211; 1\/8 palam<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>Rice &#8211; \u00bd padi<\/p>\n<p>Ghee &#8211; 5 palam<\/p>\n<p>Salt &#8211; \u00be palam<\/p>\n<p>Pure Water &#8211; 1 padi<\/p>\n<p><strong>Method<\/strong>:<\/p>\n<p>1. Fry all the ingredients separately in little ghee except the cumin seeds and asafoetida. Fry asafoetida in the pan until it becomes crispy. Powder the cumin seeds along with it.<\/p>\n<p>2. Clean small rice and drain the water completely. Then add the masala powder prepared and mix well.<\/p>\n<p>3. Heat 2\u00bd palam ghee in a rice pot and put the rice and masala mixture in it. Stir well for 5 minutes. Add pure water to the fried rice and stir again. When the rice is half done, add powdered salt.<\/p>\n<p>4. Mix again and when the rice is almost done, add 2 \u00bd palam ghee.
